Cookbook {*****} Beef top round steak 1 1/2 Carrots 3 Dried apricots 1/2 c Dried prunes 1/2 c Onion, sliced thin 1 Orange juice 1 c Potatoes, peeled 2 Sweet potato, peeled 1 {**********} 6 Servings Water Cut the vegetables into 1-inch pieces. Cut the beef into strips. Brown the meat in a nonstick pan. Add the vegetables, prunes, apricots and orange juice. Add enough water to cover meat and vegetables. Bring to a boil, lower the heat, and simmer for 2 to 3 hours or until the meat is tender.
