TURKEY~ BEAN~ & RICE SKILLET Regi Dean's Recipes 08/22/99 Bean Better Homes & Gardens {*****} Bell peppers -- chopped 1/2 c Celery -- sliced 1/2 c Chili powder 2 ts Crushed tomatoes 14 1/2 oz Dark red kidney beans -- 15 oz Long-grain rice 1 c Low-fat Monterey Jack cheese 3/4 c No-salt-added tomato sauce 8 oz Olive oil 1/2 ts Onions -- chopped 1/2 c Salt 1 ts Turkey light meat, skinless 1 lb Water 1/4 c {**********} 6 Servings Cooked Undrained Grated In a skillet, heat oil over medium heat. Add turkey, onions, bell peppers, and celery. Cook until turkey is done and vegetables are tender. Stir in crushed tomatoes, kidney beans, tomato sauce, water, chili powder, and salt. Bring to a boil. Stir in rice. Cover and reduce heat. Simmer, stirring occasionally, 10 minutes or until rice is done. Sprinkle cheese on top.
