TUNA PATTIES Regi Dean's Recipes 08/22/99 Fish The Tuna Cookbook {*****} -3 slices Butter 1 tb Chopped celery 1/2 c Chopped green onion 1/4 c Chopped green onion 2 tb Clove garlic; fine minced 1 Cucumber; peeled and 1 sm Egg; well beaten 3 -finely chopped Lemon juice 1 tb Shortening 4 tb Soft bread crumbs; about 1 c Sour cream 1/2 c Sour cream 1/2 c Tuna; drained, finely flaked 2 cn {**********} 6 Servings Juice of 1/2 lemon Salt and pepper to taste Mix ingredients, except shortening, together and form into patties. Melt shortening in heavy skillet and saute the patties until golden brown. Drain on absorbent paper. Serve hot with sauce or chill for several hours or overnight and serve cold with Cucumber sauce. Cucumber sauce: Mix all ingredients well and chill. Sour Cream Sauce: In small saucepan saute onion in butter. Lower heat and stir in sour cream and lemon juice. Salt and pepper to taste.
