MUSHROOM SAUCE Regi Dean's Recipes 08/22/99 Sauces Nita {*****} All-Purpose Flour 2 TBSP. American Cheese, shredded 1/2 cup Butter 2 TBSP. Half and Half 1 cup Salt 1/4 tsp. Sliced Fresh Mushrooms 3/4 cups White Pepper 1/4 tsp. {**********} Melt butter in a heavy saucepan over low heat. Add mushrooms and saute' until tender. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add Half and Half. Cook over medium heat, stirring constantly until thickened and bubbly. Add the cheese and stir until melted. Season with salt and pepper. Serve over meats or vegetables. YIELD: 1 3/4 cups
