Muffins ( Jalapeno Corn ) Regi Dean's Recipes 08/25/99 Muffins New Orleans Cookbook {*****} All purpose flour 1 c Baking powder 1 tb Corn kernels (at room temp) 2 c Eggs 4 lg Milk 3/4 c Salt 1 ts Seeded and minced 2 tb Softened butter 1 tb Veg oil 1 tb Yellow cornmeal 1 c {**********} 12 muffins Jalapeno peppers Preheat oven to 375. Grease a 12 muffin tin with the softened butter. In large bowl, whisk the eggs - add the jalapenos and corn. Stir in the flour, cornmeal, baking powder and the salt. Add the milk and oil.
