Muffins ( Corn ) Regi Dean's Recipes 08/25/99 Muffins Meredith McCartry {*****} Corn flour or cornmeal 2 c Salt 1/2 ts Soft tofu 6 oz Water 3 c Whole wheat pastry flour 1 c {**********} 12 muffins Mix flours. Crumble tofu into blender. Add boiled water and salt to tofu in blender (carefully) and blend until not quite smooth. (Just a few pulses). Add immediately to flour and mix well.
