Muffins ( Coconut Molasses ) Regi Dean's Recipes 08/25/99 Muffins Whole Grain Muffins {*****} AM Unrefined Vegetable Oil 1/4 c Buttermilk 2/3 c Egg or egg replacer 1 Flaked unsweetened coconut 1 c Ginger 1/2 ts Non-alum baking powder 2 ts -OR- honey Pure vanilla 1 ts Sea salt (optional) 1/2 ts Unsulphured molasses 1/2 c Whole Wheat Flour 2 c {**********} 12 muffins In mixing bowl stir together flour, baking powder, salt, ginger and coconut. Mix liquid ingredients and add to the dry mixture until moistened. Fill well-greased muffin tins 2/3 full. Bake at 350 F. for 20-25 minutes.
