Mexicali spoonbread casserole Regi Dean's Recipes 1/12/00 Main Dish Donna Martin {*****} ground beef 1 lb onion chopped 1 cup green pepper chopped 1/4 cup garlic minced 2 - 3 clov tomato sauce 1 3/4 cup whole kernel corn 12 ounces salt 1 tsp chili powder 2 - 3 tsp peper 1/8 tsp black olives pitted & sliced 1/2 cup cornmeal 1/2 cup ye salt 1/2 tsp cheese shreded 3/4 cup eggs beaten 2 {**********} oven 350 3 qt. casserole cook first 4 ingredients til brown add next 6 ingredients mix well simmer whil e making topping shred cheese set aside beat eggs set aside topping----milk salt and cornmeal mix in pot bring to boil over med heat stiring often (will stick to pan if not watched)remove from heat add eggs and cheese stir well till cheese melts pour carefully over hot meat in casserole bake for 40 - 50 minutes or until golden brown on top
