light fruit cake Regi Dean's Recipes 1/12/00 Cakes Donna Martin {*****} margarine 1/2cup sugar 1/2 cup eggs separated 2 rum 1/2 cup almond or lemon extract 1/2 tsp deluxe mix glazed fruit 1 lb raisins 3/4 cup walnuts 3/4 cup flour 1 1/2 cups baking powder 1/2 tsp {**********} oven 325 grease and line with double wax paper 2 - 4 x 8 loaf pans put fuit, raisins & walnuts in a large bowl and dredge with 1/4 cup of the flour cream margarine add the sugarand egg yolks beat well sift the flour and baking powder together add alternately with the rum mix well add extract mix well mix in the dredged fruit and walnuts mix well in a separate bowl beat egg whites until stiff and fold carefully into batter pour into pans evenly divided bake for 1 - 1 1/4 hr. until toothpick comes out clean cool in pans 20 minutes and tip out onto rack to cool when cool wrap separately in saran wrap store for 2 weeks to ripen
