DRIED APPLE CAKE Regi Dean's Recipes 08/22/99 Cakes Nita {*****} Allspice 2 tsp. Baking Soda 2 tsp. Cinnamon 1 tsp. Dates, chopped 1 lb. Dried Apples 3 cups Margarine 1 cup Molasses 1 cup Nutmeg 2 tsp. Nuts, chopped 2 cups Raisins, chopped 2 cups Salt 1/2 tsp. Sifted Flour 4 cups Sugar 2 cups {**********} Soak apples overnight in just enough water to cover. In the morning, drain well and chop apples fine. Add molasses and simmer until tender. Cool. Pre-heat oven to 350* Cream butter and sugar until light and fluffy. Sift a little flour over raisins, nuts and dates. Resift remainder of flour with salt, baking soda, ground allspice, nutmeg and cinnamon. Add raisins, nuts and dates. When blended, stir in apples and molasses. Turn into 2 loaf pans lined with wax paper Bake at 350* for 1 hour. Cool 5 minutes before turning out.
