coconut macaroons Regi Dean's Recipes 1/12/00 Cookies Donna Martin {*****} egg whites large 4 salt 1/4 tsp cream of tartar 1/2 tsp vanilla 1 tsp sugar 1 cup shredded coconut 2 cups {**********} oven 325 line cookie sheets with foil or brown paper in medium bowl beat egg whites salt cream of tartar and vanilla until soft peaks form add sugar 2 tbsp at a time beating well at each addition continue beating until stiff and glossy fold in coconut drop by spoonful 1 1/2 inches apart on prepared sheet bake 20 - 25 minutes until light golden browwn at edges cool on sheet for 10 minutes before removing to rack makes 6 dozen cookies
