CHEAMY CHIVE-STUFFED POTATOES Regi Dean's Recipes 08/22/99 Vegetables Nita {*****} Butter or Margarine, softened 1/2 cup Chopped Onion 2 TBS. Frozen chopped chives, thawed 1 - 2 oz. Medium Baking Potatoes 8 Paprika Pepper 1/4 tsp. Salt 1/2 tsp. Sour Cream (16 oz.) Vegetable Oil {**********} Scrub potatoes thoroughly and rub skins with oil. Bake at 400* for 1 hr. or until done. Allow potatoes to cool to touch. Slice skin away from top of each potato. Carefully scoop out pulp, leaving shells intact - mash pulp. Combine potato pulp, butter, chives, onion, sour cream, salt and pepper. Mix well. stuff shells with potato mixture, sprinkle with paprika. Wrap in heavy-duty aluminum foil. Bake potatoes at 400* for 10 min. or until heated thoroughly. Yield 8 servings.
