Biscuits ( Sweet Potatoe ) Regi Dean's Recipes 08/25/99 Biscuits Sue Klapper {*****} Baking powder 2 1/2 c Butter or margarine softened 1/4 c Buttermilk 5 tb Flour 2 c Salt 1/2 ts Shortening 1/4 c Sweet potatoes cooked-mashed 1 c {**********} 24 servings Preparation Time: 0:15 Preheat oven to 450. In a large bowl, combine flour, baking powder, and salt. Using a pastry blender or 2 knives, cut in butter and shortening until well blended. Add sweet potatoes and enough buttermilk to make a soft dough. Lightly knead dough about 20 times. On a lightly floured surface, roll out dough to 1/2 inch thickness. Use a 2 inch biscuit cutter to cut out biscuits. Bake on an ungreased baking sheet, 12 to 15 minutes or until biscuits are light golden brown. Serve warm. Yield: abut 2 dozen biscuits.
